Seen by many "experts" as too light and acidic to make "serious" wines, Sauvignon Blanc is a refreshing departure from the trend to oak every wine. At its best, Sauvignon Blanc grapes produce wines with searing acidity and a multitude of fruit flavours.

The Sauvignon Blanc grape grows best in cooler climates. When grown in hot areas, it creates flabby wines without much fruit character. The Sauvignon Blanc grape is a prolific vine that produces high yields of grapes. However, it is at its best when the yields are controlled, so that grapes with bold fruit character are produced.

Sauvignon Blanc characteristically produces wines that are pale in color, light to medium bodied, high in acidity and quite aromatic.

Sauvignon Blanc grapes can produce a multitude of fruit flavours and aromas including gooseberry, tart green apple, pear, melon, passion fruit and mango. It may also give rise to herbaceous and vegetative aromas such as grass, herbs, green peas, asparagus and red peppers. Sauvignon Blanc from the Loire region in France and some wines from New Zealand can also have a rather pungent aroma described as cat's pee or male sweat!! Sauvignon Blanc wines may also display mineral aromas and in hotter climates, ripe melon flavours.
