South Easterly winds often blow cool moist air into the Elgin/Grabouw valley. This results in the development of botrytis and every year there is some botrytis in the Riesling vineyard at Paul Cluver Wines, adding complexity to the wine.
Due to the botrytis, a careful selection is made to ensure that only healthy grapes are harvested - further selections are made on the sorting tables at the winery. After 6 hours of skin contact, the grapes are pressed, settled and then fermented. Fermentation was stopped in one tank at a residual sugar of 17 g/l whilst the rest of the wine was fermented dry. The wine was then blended, stabilized and bottled.
This wine show typical varietal flavour, lots of spice and floral tones is very austere and has the typical Riesling nervousness. The palate is elegant and rich with a long lingering after taste carried by the great acidity of the wine, typical for the varietal.
