THELEMA
CABERNET SAUVIGNON 2003

From vineyards planted in 1998/9 in decomposed granite Hutton soils on Thelema, the grapes for this superb wine, were harvested by hand from 11th March to 1st April at a yield of 6t/ha. The bunches were de-stalked and the berries hand sorted before crushing and fermenting in stainless steel tanks. The wine was pressed, then racked to 50% new French oak barrels for malo-lactic fermentation and 20 months ageing.
Garnet red with an inky rim. Complex nose of mint, blackcurrant and chocolate and the palate is juicy and sweet. There is a good layer of toasty oak in the background and the finish is grippy and long.
One of the Cape's most consistently outstanding wines.
